What is a proper Sunday breakfast without blueberry
pancakes?
Not worth getting out of bed for! So if you want to spoil your family, friends or simply yourself - go for fluffy blue!

For the batter
- ca. 250 gram spelt flour
- pinch of salt
- 70 gram sugar
- 2 tsp baking powder
- 1/4 tsp organic vanilla powder (ground vanilla beans)
- 3 eggs - yolks and egg white separated
- ½ teaspoon (2 g) vanilla extract
- ca. 300 ml whole milk
- 300 gram fresh blueberries
- oil for the pan
Here's
what you do!
Separate the eggs and whisk egg whites with a pinch of
salt and a little bit of sugar until fluffy. Set aside and mix egg yolks with
sugar vanilla powder until foamy (the color changes from yellow to sort of light
beige).
Slowly add the flour, baking powder, baking soda, salt
and mix until smooth, same with the milk. Don't add all of it at once…the
batter shouldn't be runny. Let the batter rest for about 20 minutes and add the
beaten egg whites thoroughly - be careful not to mix it too long and the fluffiness
is gone! Add the blueberries.
Add some oil in a frying pan and heat it up on middle
heat. Scoop the batter and fry until bubbles appear. Flip them carefully and
fry until golden brown. Serve them with maple syrup or a homemade blueberry sauce
(boil blueberries with a little bit of vanilla powder, sugar and lemon juice).
