Fresh organic pasta with melted tomatoes and blueberry sirup caramelized ground beef - I love cooking 💗



So here's what you need!
  • 400 gr of ground beef
  • 3 big or 4 medium tomatoes
  • Blueberry sirup (black currant sirup works fine too)
  • aged balsamico 
  • a dash from you kitchen wine - water works too...but a little dash of wine gives it the little extra kick ;)
  • half an onion (I used the green part of spring onions in this case as the person I made it for is not allowed to eat onions)
  • garlic olive oil 
  • oil of choice
  • salt, fresh pepper, tiny dash of chili if you like the little tickle in the back of your throat
  • Parmesan shavings
And here's what you do!

Fry the ground beef in a little bit of oil - not too much as you already have about 14 % fat in the meat. I use a fairly high temperature as I like it crsipy. When the ground beef has nice deep brownish color add the blueberry sirup. The amount depends on you but I use about 3 to 4 tablespoons. Now you wait until the liquid is reduced and the meat has this brownish layer. Now add the tomatoes, onions (if you use spring onions wait until the dish is done and add them last!) garlic oil, salt, chili and pepper, put a lid on the pan and wait until the tomatoes fall apart. Now is you chance to share a dash of your wine with food add a little bit of water if you're greedy with your wine. And here is the moment of truth. Take a spoon and try your creation. Does the circuit close or are there little gaps that make the circle unround? Is it flat in the back of your throat? Try some more pepper and salt. Too sourish? Add some more sirup! Too sweet, add some aged balsamico. The tomatoe taste is lacking - add some tomatoe puree. Try it and trust your palate - you can do it! When you are happy with your oeuvre, cook some fresh pasta, mix it with the sauce, add the parmesan shavings and impress your guests!
