Oreo Chocolate Cheesecake - I love caking πŸ’—

Let’s be honest! When it’s this time of the year, when the cold and nasty rain finds it’s way through the thickest high tech fabric and the day light never gets bluer than grey, we all need a little comfort food. Well- as you know – with me it’s nothing sweet but I made this most comforting (though not very waist friendly) cake to comfort you and impress your guests πŸ˜‰

Here’s what you need!
For the base

  • 450 gr sugar
  • 250 gr light spelt flour
  • 100 gr cocoa powder
  • 1-1/2 tsp baking powder
  • 1-1/2 tsp baking soda
  • Pinch of salt
  • 2 eggs
  • 100 ml milk
  • 120 gr melted butter
  • vanilla extract or vanilla bean powder
  • 200 ml boiling water
  • For the filling:
  • 300 ml whipping cream
  • 200 gr Philadelphia
  • 2 ts Cocoa powder
  • 150 gr powdered sugar
  • 10 Oreo Cookies (crushed)

For the milk chocolate ganache:

  • 200 gr milk chocolate
  • 200 gr sour cream
  • 100 gr cane sugar
  • Pinch of salt

For decoration

  • 10 pretty and non-crushed Oreo cookies
Here’s what you do!

  • Grease two round baking forms and line the bottom with baking paper.
  • Mix  sugar, flour, cocoa powder, baking powder, baking soda and salt before you add the eggs, milk, melted butter an vanilla
  • Add boiling water until the batter is nice and  smooth.
  • Divide it into two parts and bake it for ca. 30 min – do the wooden pick – if no batter is stuck on the wood the cake is done
  • Cool a little bit in the forms, than remove from the forms and cool out completely. (When you turn them up side down the even out on the top.
  • Whip the cream until it’s firm. Mix Philadelphia, Cocoa powder, sugar, crushed cookies in a separate bowl and add the whipped cream afterwards.
  • Spread the filling on the bottom cake, put the second one on top (If you still have bumps on top of the cake try to cut them even).
  • Now spread the rest on top and cover the cake with it.
  • Put the cake in the fridge.
  • Add sour cream, sugar, chocolate and a pinch of salt in a small saucepan and melt it until it’s smooth
  •  Let it cool down a bit before you pour the ganache over the cold cake.
  •  Decorate the cake with pretty Oreo cookies and you are ready to impress your guests.
