Organic Chicken breast with sesame miso spinach and fresh pasta - I love cooking!💓
You invite
someone for dinner and even before you have spoken out the invitation you have
already in mind what you gonna serve... But nooooo…shortly after you find out that
the person doesn’t like fish. Fine! Oh…and no Seafood! Ok…. Ohhhhh and NO
tomatoes….Seriously, no tomotoes??? Too bad just about every dish you make
contains tomatoes in one or another way – you get quite frustrated if not to
say upset that you are just about to cancel the invitation because you have to
go fishing with your grandpa… But the rest of that person seems to be so
interesting that you sit down and think about what in your food repertoire does
not contain any of the no-gos. Chicken with a little untraditional (means
without mushrooms) Marsala sauce –
tatataaaaa! Nothing that grew up in the ocean and nothing red! You’re good to
go!
Here’s what you need
For the
chicken
- 2 organic chicken breasts with skin
- 120 ml Marsala wine
- 4 shallots
- Butter
- Garlic to taste
- Chicken stock (200 ml)
- 2 twigs of fresh thyme
- Ts of garlic butter
- Salt & fresh pepper to taste
- Flour
For the spinach
- 300 gr fresh spinach
- Sweet Miso paste (2 SS)
- Sesame
- Japanese soy sauce
- Sake
- Agave syrup to taste
- Garlic to taste
- Olive oil
- Plus fresh pasta (basmati rice works too)
Here’s what you do!
- Smack the chicken with a meat tenderizer until your anger issues are gone or it about half as thick as before
- Mix salt and pepper with flour and cover the chicken with it
- Put a little bit of garlic underneath the skin¨
- Fry the chicken until it’s done (when you stick in it the liquid shuld be clear) and set in the oven to keep it warm
- Keep the pan and add the shallots (cut up in small pieces) caramelize them with a little bit of brown sugar, add the Marsala wine and let it reduce.
- Add the chicken stock, Thyme, salt, pepper and let it boil down, add the butter to thicken the sauce
- Add the chicken breasts and set it back to keep it warm
- Roast the sesame in the pan (no oil!) until it’s golden brown, deglaze it with Sake and add soy sauce, miso paste, agave syrup, garlic, olive oil.
- Add the spinach and stir until it’s done but not too much and it gets brown and nasty ;)
- Cook the pasta and serve right away!
