Grandma's angel eyes - an early taste of Christmas :)
ANGEL EYES
As you most
likely found out by now is that I'm not a big fan of sweet stuff...but those
cookies is a culinary memory of my childhood. Those cookies melt in the mouth
and make your entire house smell like Christmas.
Here’s what you need!
The dough:
2 vanilla beans
150 g butter, soft
2 yolks
75 g raw cane sugar
1 pinch of salt
225 g flour, gluten-free
The filling:
400 g blueberries
honey to taste
lemon to taste
Here’s what
you do!
The filling:
- Mix the blueberries with the honey and boil until you get a smooth consistence and add lemon to taste
- set aside to cool down
The cookies:
- Split the vanilla bean down its length, scrape out the seeds
- Mix them immediately with the soft butter, honey (or sugar), egg yolks and the pinch of salt
- Add the flour, marzipan and the sliced almonds until you get a smooth dough
- Wrap it in foil and put in the fridge to rest for about 2 hours.
- Form equally sized balls, set them on the baking tray (not too close to each other cause they expand!)
- Poke holes in the balls (works awesomely with the handle of a wooden spoon) and fill them with the blueberry filling
- Bake for about 12 – 15 minutes (200 °C, preheated, top-/ bottom heat)
- Let them cool down, dredge them with powdered sugar and let them cool off completely
- Enjoy :)
