Thai chicken coconut soup
Rainy, stormy, cold and nasty outside? This soup with ginger and red curry paste warms you up like no wool blanket could do :)

Here’s what you need!
- 2 large chicken breasts (500 g), cut into to chunks
- 3 tsp vegetable oil
- 3 tsp honey
- 5 kaffir lime leaves
- 2 (300 ml) cans coconut milk
- 400 ml chicken broth
- 4 large white mushrooms sliced
- 1 red/1 yellow bell pepper sliced
- 1 thumb thick piece ginger (peeled and cut into small pieces)
- 2 tsp red curry paste
- Freshly squeezed lime juice
- 4 stalks fresh lemongrass tough outer layers removed and ends smashed
- chopped fresh cilantro for garnish
Here’s what
you do!
- Cut the chicken in bit-sized pieces, fry them in hot oil
- When they start to get golden-brown caramelize them with the honey
- Add the broth, ginger, curry paste, lime juice and the coconut milk, stir with the lemon grass. Boil on low heat for about 10 minutes
- Meanwhile cut the bell pepper and the mushrooms and add them and simmer the soup for another 5 minutes
- Serve with fresh cilantro!
