Thai chicken coconut soup - warms the belly and the mood :)


 Thai chicken coconut soup

 Rainy, stormy, cold and nasty outside? This soup with ginger and red curry paste warms you up like no wool blanket could do :)





    


Here’s what you need!
  • 2 large chicken breasts (500 g), cut into to chunks
  • 3 tsp vegetable oil
  • 3 tsp honey
  • 5 kaffir lime leaves
  • 2 (300 ml) cans coconut milk
  • 400 ml chicken broth
  • 4 large white mushrooms sliced
  • 1 red/1 yellow bell pepper sliced
  • 1 thumb thick piece ginger (peeled and cut into small pieces)
  • 2 tsp red curry paste
  • Freshly squeezed lime juice
  • 4 stalks fresh lemongrass tough outer layers removed and ends smashed
  • chopped fresh cilantro for garnish


Here’s what you do!
  • Cut the chicken in bit-sized pieces, fry them in hot oil
  • When they start to get golden-brown caramelize them with the honey
  • Add the broth, ginger, curry paste, lime juice and the coconut milk, stir with the lemon grass. Boil on low heat for about 10 minutes
  • Meanwhile cut the bell pepper and the mushrooms and add them and simmer the soup for another 5 minutes
  • Serve with fresh cilantro!
