Ellazilla-nized scones
with raisins
and lime zest :)
Just
hearing the word scones gives me a warm and cozy feeling. It brings
back memories of talked through afternoons with a good cup of tea,
snuggled in a blanket, enjoying fresh scones and talking about everything and nothing while the snow slowly covers the world outside....
That’s what you need!
- 650 g flour
- 20 g fresh yeast
- 250 ml lukewarm milk
- 100 g cane sugar
- A pinch of salt
- 3 eggs (2 for the dough, one for brushing of the scones)
- 150 g cold butter
- 200 g organic raisins and some apple juice to soak them in
- fresh lime zest
- 1 tbsp vanilla extract
- jam
- slightly whipped and vanilla infused heavy cream
Here’s what you do!
- Put the flour into a big bowl and make a well in the center. Crumble the yeast into it and add the milk. Stir until resolved- Leave it to raise at a warm spot for about 30 minutes.
- Now add the rest of the ingredients and knead until you get a smooth dough. If the dough still sticks to your fingers you need to add some more flour. Add a bit more flour and knead until it neither sticks to your fingers nor the bowl. Cover it with a clean towel and let it rest for about 30 min.
- Add the raisins (I soak them for 10 minutes in apple juice so they are a little juicier) and form equally sized balls. Set them on a baking tray and brush with a mixture of 1 egg and 2 tbsp of milk. Bake for about 25 minutes (180 °C, preheated, top-/ bottom heat).
- Serve them with jam and vanilla infused slightly whipped cream and enjoy:)
